The resultant wine is a classic iron fist in a velvet glove. Masses of ripened dark fruits, savoury oak and spice married to a deep ferrous quality. Mouth-filling tannins and a wall of joyous flavours cascade from the front to the back of the palate. A wine of concentration and complexity but so nimble on its feet so as almost to defy description. *phew* This beautiful bottle comes in a special presentation box. The important numbers: 100% Cabernet Sauvignon 14.5% alc/vol 11 days drying on racks 22 months in barrels 18 months in bottle prior to release Will last 20 years+ but who can wait that long?! A very rare opportunity to buy some Macedon Ranges Pinot Noir grapes from 30+ year old vines was too good to pass up.
The grapes were 100% whole bunch fermented and pressed into new and aged barriques, creating a silky palette with stalky, herbal notes and wonderful Pinot Noir complexity.
Definitely one for the ‘Pinotphiles’.

Our Shiraz grapes were handpicked and fermented with 20% whole bunches, then pressed into new and used oak barriques creating a wonderfully balanced and complex wine showing delicious red and dark berries, fine tannins and some savoury oak with a long satisfying finish.

This is our version of a ‘Super Tuscan’.
A blend of 50% Sangiovese, 35% Cabernet Sauvignon and 15% Shiraz creating a complex yet harmonious wine. Lovely cherry like characters of the Sangiovese merge beautifully with the red and dark berries of the other two varieties. Subtle new oak characters are evident finishing with some fine tannins. A truly enjoyable experience.
