Well here is something very special (warning wine wankerism ahead)
Our Cabernet Sauvignon grapes were rack dried for 11 days before processing and fermentation, then allowed to rest in some quality new oak.
The resultant wine is a classic iron fist in a velvet glove.
Masses of ripened dark fruits, savoury oak and spice married to a deep ferrous quality.
Mouth-filling tannins and a wall of joyous flavours cascade from the front to the back of the palate
A wine of concentration and complexity but so nimble on its feet so as almost to defy description

100% Cabernet Sauvignon
11 days drying on racks
22 months in barrels
18 months in bottle prior to release
Will last 20 years+ but who can wait that long?!
